Southern Comfort

I decided to get back to my Carolina ancestry today and made some homemade beef and black bean chili and cornbread. Holy effing delicious. And even the kids ate it! 

Okay, so Camden ate it WILLINGLY (two bowls!) but we had to force it down Calen's throat. Only because we have to force anything that isn't pizza or hot dogs down his throat. 

Camden also ate his entire portion of my homemade barbecue chicken last night. And then came back and ate half of MY portion. He is definitely my eater.  



You want the recipe? Of course you do. 

1.5 pounds ground beef (80% lean)
1 can black beans drained, rinsed
1 red bell pepper diced
1 large yellow onion diced
2 cans Rotel tomatoes with green chiles
2 cans crushed tomatoes
1/2 can corn
2 tsp chili powder
1 tsp Mexican chili powder
1/2 tsp cumin
1/2 tsp celery salt

Brown ground beef in pan, drain. Throw beef in crock pot with all other ingredients. Stir. Cook on high for 4 hours or low for 6. Add a tablespoon or two of tomato PASTE at the end to thicken it up some. Done. Makes a shit-ton.

Cornbread was made out of the box. Costco sells great cornbread mix FYI.

Camden saying "Peeease?!?" for another spoonful of chili. My kind of kid.
